- Sausages with 10 Herbs
- (Salsicce alle 10 Erbe)

- Ingredients:
8 Italian sausages
Fresh rosemary needles, chopped
Fresh sage leaves, chopped
Fresh basil leaves, chopped
Fresh thyme leaves, chopped
Fresh flat-leaf parsley, chopped
Fresh marjoram leaves, chopped
Fresh mint leaves, chopped
Fresh tarragon leaves, chopped
Celery stick(s), chopped
Shallot(s), chopped
3 and 1/2 fl oz (100 ml) dry white wine
Directions:

- The quantities of the various herbs, celery and shallot to use depend on individual taste, but it is best to go easy with the stronger ones, such as rosemary.
Prick the sausages, put them in a pan with 2 tablespoons of water and cook, turning occasionally, for about 10 minutes until golden brown.
Add the herbs, celery and shallot(s) and cook for a few minutes more.
Pour in the wine and cook until it has evaporated, then serve. Serves 4.
