- Roast Loin of Pork
- (Arista al Forno)

Ingredients:
-
- 2 and 1/4 lbs (1 kg) hind loin of pork, chined
- 1 fresh rosemary sprig
- 6 fl oz (175 ml) dry white wine
4-5 tablespoons hot milk
- 1 oz (25 grams) butter
3 tablespoons extra virgin olive oil
Salt and pepper
Boiled cannellini beans, to serve

- Directions:

- Preheat the oven to 180°C (350°F) Gas Mark 4.
Heat the butter, rosemary and olive oil in an oval roasting tin.

- Add the pork and cook, turning frequently, for about 5-10 minutes until browned all over.
Add the wine and cook until it has evaporated.

- Season with salt and pepper.
Transfer to the oven and roast, turning occasionally and basting with hot milk, for about an hour or until cooked through.
Remove the pork from the oven and leave to stand for about 10 minutes.

- Carve and serve with a side dish of boiled cannellini beans, seasoned with extra virgin olive oil, salt and pepper. Serves 6.
