- Spinach and Mushroom Salad
- (Spinaci In Insalata Con Champignon)

Ingredients:

- 11 oz (300 grams) baby spinach leaves, coarse stalks removed
- 1 lettuce, trimmed
- 5 oz (150 grams) button mushrooms
- Juice of 1 lemon, strained
4 tablespoons extra virgin olive oil
1 tablespoon Dijon mustard
Salt

- Directions:
- Half fill a bowl with water and add half the lemon juice.
Thinly slice the mushrooms and add to the acidulated water.
Tear the lettuce leaves into pieces and place them in a salad bowl with the spinach leaves.
Drain the mushrooms and add to the bowl.
Whisk together a generous pinch of salt, mustard, olive oil and the remaining lemon juice in a bowl.
Pour the dressing over the salad.
