- Mushroom and Shrimp Salad

Ingredients:
11 oz (300 grams) any kind of wild mushrooms
Juice of 1 lemon, strained
14 oz (400 grams) cooked shrimp, peeled and deveined
Extra virgin olive oil, for drizzling
Salt and pepper
Fresh flat-leaf parsley, chopped, for garnishing
Directions:

- Thinly slice the mushrooms and sprinkle with the lemon juice.
Mix the mushrooms with the shrimp in a serving bowl.
Season with salt and pepper, drizzle with olive oil and garnish with parsley. Serves 4.
