- Sea Trout Roe with Potatoes
- (Uova di Trota e Patate)

Ingredients:

- 1 jar (about 1 and 1/2 oz or 40 grams) sea trout roe
- 4 potatoes, unpeeled
- 1 tablespoon chopped fresh chervil
2 tablespoons double cream
- 2 oz (50 grams) butter, softened
Salt
Lemon slices, to garnish

- Directions:

- Preheat the oven to 180°C (350°F) Gas Mark 4.
Wrap each potato in a sheet of foil and bake for about 50 minutes.
Unwrap the potatoes and peel them.

- Cut the potatoes in half and arrange on a warm serving dish.
Cream the butter.

- Beat in the chervil, cream and a pinch of salt.

- Spread the mixture over the potatoes.
Divide the roe and garnish with lemon slices. Serves 4.
