- Potato Nests with Eggs
- (Nidi di Patate Con Le Uova)

Ingredients:

- 4 eggs
4 potatoes
1 oz (25 grams) butter, cut into 4 slices
1 teaspoon anchovy paste
Salt and pepper

- Directions:

- Preheat the oven to 200°C (400°F) Gas Mark 6.
Cook the potatoes in salted water for about 9-10 minutes.
Drain.
Cut off the tops and scoop out the potato flesh with a teaspoon, leaving the shells intact.
Place the potato shells in an ovenproof dish and break an egg into each one.
Top each with a slice of butter and a little anchovy paste.
Season with salt and pepper and bake for about 10 minutes. Serves 4.
