- Mussels Au Gratin
- (Cozze Gratinate)

Ingredients:
-
- 2 and 1/4 lbs (1 kg) mussels, scrubbed and beards removed
- 3 oz (80 grams) breadcrumbs
- Large pinch of dried oregano
Extra virgin olive oil, for drizzling
- 3 tablespoons chopped fresh flat-leaf parsley
2 garlic cloves, chopped
Salt and pepper
1 lemon, cut into wedges, to garnish

- Directions:

- Preheat the oven to 200°C (400°F) Gas Mark 6.
Place the mussels in a frying pan and place over a high heat for about 5 minutes until they open.
As they open, remove from the frying pan and place the half-shells containing the mussels in a roasting tin.
Discard any that remain closed and the empty half-shells.
Sprinkle the mussels with the oregano, parsley and garlic.

- Season with salt.

- Drizzle generously with olive oil.
Sprinkle with the breadcrumbs.
Bake for about 5 minutes.

- Transfer to a warm serving dish.
Season with pepper and garnish with the lemon wedges. Serves 4.
