- Mixed Tuna Salad
- (Insalata Mista Al Tonno)

Ingredients:

- 9 oz (250 grams) canned tuna in oil, drained and flaked
19 oz (250 grams) canned cannellini beans, drained and rinsed
1 bunch of rocket, trimmed
1 red pepper, halved seeded and cut into strips
1 radicchio, trimmed
1 celery stalk, cut into thin batons
1 round fennel bulb, trimmed and thinly sliced
2 tomatoes, cut into wedges
2 oz (50 grams) stoned black olives
4 tablespoons extra virgin olive oil
Pinch of dried oregano
Salt and pepper

- Directions:

- Place the beans, rocket, radicchio, celery, fennel, pepper and tomatoes in a salad bowl.
Add the tuna and olives.
Whisk together the olive oil, oregano and a pinch of salt and pepper in a bowl.
Pour the dressing over the salad.
Toss and serve. Serves 4.
