- Fried Zucchini Flowers
- (Fiori Di Zucchine Fritti)

Ingredients:

- 12 zucchini flowers, trimmed
- 3 and 1/2 oz (100 grams) plain flour
- 1 egg, separated
- 2 tablespoons extra virgin olive oil
5 tablespoons dry white wine
Vegetable oil, for deep-frying
Salt and pepper

- Directions:
- Mix together the flour, wine, egg yolk and olive oil in a bowl.

- Season with salt and pepper.
Add 5-7 fl oz (150-200 ml) of warm water to make a fairly runny, smooth batter.
Leave to stand for about an hour.
Whisk the egg white in a grease-free bowl.

- Fold gently into the batter.
Heat the vegetable oil for deep-frying in a large pan.
Dip the flowers in the batter.

- Shake off the excess and fry in the hot oil until golden.
Remove with a fish slice and drain on kitchen paper.
Sprinkle with salt and serve immediately. Serves 4.
