- Fried Mozzarella Sandwiches
- (Mozzarella In Carrozza)

Ingredients:

- 5 oz (150 grams) mozzarella cheese, sliced
8 bread slices, halved
2 eggs
6 fl oz (175 ml) milk
3 and 1/2 oz (100 ml) extra virgin olive oil
1 oz (25 grams) butter
Plain flour, for dusting
Salt

- Directions:

- Place the slices of mozzarella on half the bread.
Top with the remaining bread to make sandwiches.
Beat the eggs in a shallow dish with the milk.
Season with salt.
Dust the sandwiches with flour.
Place in the beaten eggs, pressing down gently with a fish slice until they have absorbed some of the mixture.
Heat the olive oil and butter in a frying pan.
Add the sandwiches and cook for about 2 minutes on each side until crisp and golden brown.
Remove with a fish slice.
Drain on kitchen paper.
Serve hot. Serves 4.
