- Eggs with Mushrooms
- (Uova Ai Funghi)

Ingredients:
-
- 4 eggs
- 9 oz (250 grams) button mushrooms
3 oz (80 grams) butter
Salt and pepper

- Directions:
- Preheat the oven to 160°C (325°F) Gas Mark 3.
Remove the mushroom stems and thinly slice the caps.
Melt 2 oz (50 grams) of the butter in a frying pan.

- Add the mushrooms and cook, stirring occasionally, for about 10-12 minutes until lightly browned.

- Season with salt and pepper to taste.
Grease four individual ovenproof dishes with the remaining butter.

- Divide the mushrooms among them and break an egg on top of each.
Season the egg whites with a little salt and bake for about 10 minutes until the egg whites have set.
Serve immediately in the same dishes. Serves 4.
