- Asparagus Valdostana
- (Asparagi Alla Valdostana)

Ingredients:
2 and 1/4 lb (1 kg) asparagus, spears trimmed

2 cooked ham (or prosciutto) slices, cut into strips

2 eggs
-
4 oz (120 grams) Fontina cheese, sliced

2 tablespoons Parmigiano cheese, freshly grated
-
Butter, for greasing
Salt and pepper
Directions:

- Preheat the oven to 180°C (350°F) Gas Mark 4.
Grease an ovenproof dish with butter.
Cook the asparagus in salted, boiling water for about 10-15 minutes.
Drain and place in the prepared dish and top with the ham (or prosciutto) and fontina cheese.
Beat the eggs with the Parmigiano cheese.

- Season with salt and pepper and pour over the asparagus.
Bake for 15-20 minutes until the Parmigiano cheese has melted and the eggs have set. Serves 4.
