Recipe: Egg Ribbon and Parmigiano Soup

Egg Ribbon and Parmigiano Soup

Ingredients:

3 large eggs
3/4 cup grated Parmigiano cheese, divided
6 cups low-salt chicken broth
3/4 cup tiny pasta (such as acini di pepe or orzo)
Chopped fresh Italian parsley

Directions:

Whisk eggs and 3 tablespoons Parmigiano cheese in small bowl to blend. Bring chicken broth to simmer in large pot. Add pasta. Cover and simmer until pasta is tender, about 6 minutes.

Gradually add egg mixture to soup, stirring constantly until egg ribbons form, about 1 minute. Simmer 1 minute longer. Ladle soup into bowls. Sprinkle with parsley. Serve, passing remaining cheese separately. Serves 4.

Recipe: Vermicelli alla Sofia

Vermicelli alla Sofia

Ingredients:

2 garlic cloves
1 1/2 cups loosely packed fresh flat-leaf parsley leaves
1 small onion, sliced (1 1/2 cups)
4 anchovy fillets, rinsed, patted dry, and chopped
1/3 cup brine-cured green olives, pitted
2 teaspoons drained bottled capers
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup plus 1 teaspoon olive oil
1 lb vermicelli (thin spaghetti) or linguine

Directions:

With a food processor running, drop in garlic and finely chop. Stop motor and add parsley, onion, anchovies, olives, capers, salt, and pepper, then process until finely chopped. With motor running, add 1/2 cup oil, blending until incorporated.

Cook pasta in a 6- to 8-quart pot of boiling salted water until al dente. Drain well in a colander, then return to pot and toss with remaining 1 teaspoon oil. Transfer pasta to a large serving bowl, then pour sauce over top and toss well. Serve immediately. Serves 6.

Cooks' note: Sauce can be made 1 hour ahead and kept, covered, at room temperature.

Penne with Broccoli Rabe

Ingredients:

12 ounces penne pasta
1/3 cup extra-virgin olive oil
4 garlic cloves, chopped
2 bunches broccoli rabe, chopped
8 anchovies, chopped
3/4 teaspoon dried crushed red pepper
1 lb tomatoes, diced
1 cup chopped fresh basil, divided
2 tablespoons fresh lemon juice
1 1/4 cups grated Parmigiano cheese, divided

Directions:

Cook pasta in large pot of boiling salted water until tender but still firm to bite. Drain; return to same pot. Meanwhile, heat oil in large skillet over medium-high heat. Add garlic; sauté 30 seconds. Add broccoli rabe, anchovies, and crushed pepper; sauté until broccoli rabe is crisp-tender, about 5 minutes. Add tomatoes and 1/4 cup basil.

Add vegetable mixture and lemon juice to pasta; toss to coat.Transfer pasta to large bowl. Add remaining 3/4 cup basil and 3/4 cup cheese; toss to blend. Season pasta to taste with salt and pepper. Serve, passing remaining cheese. Serves 4.

A Kiss is More Than Just a Kiss When It Lasts for 31 Hours.

The Guardian Sophie Arie - February 16 - An Italian man and a Thai woman locked lips for 31 hours 18 minutes, setting a new world record in a Valentine's Day kissing marathon in Vicenza, northern Italy.

Andrea Sarti, 37, a lorry driver, was so exhausted by the kiss that he had to be resuscitated with oxygen by a first aid team. Anna Chen, 26, had to lie down.

The couple, from the coastal resort of Rimini, beat the previous record of 30 hours 59 minutes, set by an American couple in 2001.

The rules required the couple to remain standing throughout the kiss. They were not allowed to eat, drink or go to the toilet, and could communicate only by written or text messages.

Mr. Sarti was reported to have insisted on taking part in the competition for the 10,000 Euros ($12,500) prize for the money he needed to marry Ms Chen. But as the kiss dragged on, Ms Chen turned out to be the more enduring of the pair.

Mr. Sarti's shoes had to be swapped for a pair of slippers while his girlfriend persevered in a pair of high heels, perched on a footstool to achieve the optimal kissing position.

Ms Chen also had to massage her boyfriend, who suffered cramps in several places.

"It was really difficult," Lucaino Gaggia, one of the organizers, told the Giornale di Vicenza. "We didn't think they could do it. Their secret was concentration ... and the ability not to think about time passing."

Meanwhile in the Piazza Farnese in Rome, thousands of gay couples smooched simultaneously on Saturday night, in a 10 second mass-kiss.

Gay rights activists called on the government to stand up to the Vatican and give equal rights to Italy's thousands of gay couples.
